Miso Chicken with Broccoli


This is a delicious and super healthy dish that requires no preparation. You can easily just throw everything in the Crock Pot before you leave for work in the morning and have a fully cooked meal when you get home. This is the type of dish your slow cooker was made for. If you like your broccoli a little crisper, simply leave it out and when you’re ready to eat, add it to the pot and cook it for about 15 minutes.

2 cups chicken broth
1/4 cup white miso
1 clove garlic, smashed
2 slices fresh ginger
4 boneless skinless chicken breast halves
1 pound broccoli florets

Coat the inside of your slow cooker pot with cooking spray, brush with oil, or line with a slow cooker liner.

Add everything to your slow cooker. Cover and cook on low for 6-8 hours until the chicken is tender and falling apart. Serve with rice or udon noodles for an authentic Japanese meal.
