Moroccan Chicken Tagine


A tagine is a term that is used for a dish, but it is also a vessel in which food is cooked. It’s a stew-like dish that is richly seasoned and most often served with rice or couscous. This version’ s loaded with dried fruit and is a warmly spiced, sweet and savory dish that you’ll love. Use any variety of dried fruit; raisins or even dried mangoes will work well here. The best thing about these types of dishes is that you can experiment until you find exactly what you are looking for.


8 skinless, boneless chicken thighs
1/8 teaspoon cayenne
1/4 cup olive oil
1 medium onion, chopped
1 teaspoon ground turmeric
2 cloves garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1 tablespoon brown sugar
1/2 cup dried apricots, chopped
1/2 cup dried plums
Juice and zest of 1 orange
2 cups chicken broth
2 tablespoons cold water mixed with 2 tablespoons cornstarch


Coat the inside of your slow cooker pot with cooking spray, brush with oil, or line with a slow cooker liner.
Season the chicken with salt and pepper. Heat the oil in a large skillet and sear the chicken until it is browned on all sides.
Put the chicken in the slow cooker pot. Add the onion, seasonings, 
  and brown
sugar to the saucepan, and sauté until onion is soft.
Add the onions to the slow cooker, along with the rest of the ingredients.
Cover and cook on high for about 5 hours, until chicken is tender.
Add the cornstarch mixture, stir, and continue to cook for about 30 minutes until the sauce is thickened.
Serve over rice or couscous.
