Tomatoes, Corn and Yellow Squash with Herbed Butter


This dish is delicious any time of year, but it is particularly special in the summer when cherry tomatoes and corn are both super sweet and tasty. The addition of fresh summer herbs helps as well. Of course, you can get all of these things at the grocery store any time of the year, so don’t wait until the sun shines to make this fabulous side dish.

1/2 cup butter, melted
2 tablespoons fresh chopped mixed herbs
6 cups fresh corn kernels
2 cups cherry tomatoes
4 yellow summer squash, diced into 1/2 inch pieces
Combine everything but the herbs in your slow cooker. Season with salt and pepper. Cover and cook on high for 2 hours, until vegetables are tender.
Before serving, stir in the fresh herbs.
